Då ska du prova Solskenssalladen som främst består av vitkål, ingefära och purjolök samt lite kryddor i dressingen. Kål som huvudingrediens i en sallad är både ekonomiskt smart men också bra för tarmen. Det är också trevligt att använda vitkålen i en sallad och det är inte pizzasallad vi snackar. Kål är fullproppat med nyttiga antioxidanter och sägs ha förebyggande effekt mot mot cancer och hjärt- och kärlsjukdomar. Förutom att den är nyttig är den också lätt att lagra i svalen eller kylen och håller länge.

Du behöver:
1-1,5 kg vitkål
1 purjolök
1-2 stora bitar ingefära
Strimla alla grönsakerna tunt och lägg dem i en bunke. Jag brukar använda en matberedare, det går fort och utan större ansträngning. Riv ingefäran på rivjärn, på den grova sidan. Jag brukar använda 1 stor bit eller 2 mindre men du bestämmer, det är gott med mycket ingefära i salladen.
Lägg ingredienserna till dressingen i en kastrull och koka upp, rör om.
Ingredienser till dressingen:
1,5 dl äppelcidervinäger
0,25 dl socker
0,5 dl rapsolja
0,5 dl olivolja
1 msk malen gurkmeja
1 tsk malen vitpeppar
1 tsk salt salt
Häll den varma dressingen över salladen och blanda väl. Häll upp i förvaringskärl som går att sluta tätt, ställ in i kylen.
Ta ut lagom mängd till middagen och njut. Perfekt att serveras i portionsskålar att ställa fram.
